Chicken Curry

1 serving


1 tsp olive oil
1/4 onion
1 clove garlic
1 carrot
1 tsp curry
1/2 tsp ground cumin
1/2 tsp turmeric
3.5 oz minced chicken
0.2 cup Basmati rice
0.6 cup water
1 tsp vegetable broth
1/4 zuchinni
1/4 red bell pepper
2 handfuls frozen peas
1/4 can corn


chop onion and garlic, cut the carrot into slices, fry it on a pan in olive oil, add curry, cumin, turmeric and minced chicken meat, let it fry until the chicken is tender. Add rice, water and broth, bring to a boil and simmer for 5 minutes. Add the zuchinni and bell pepper and simmer for 10 minutes. Add peas and corn and simmer for another 5 minutes. Season with salt and pepper.
