Vegan Curry

Ingredients:

0.4 cup Basmati Rice
0.8 cup water
Salt

1/2 onion
1/2 tbsp curry
1/4 tbsp turmeric
0.7 oz vegan butter
1 tbsp flour
1 tbsp vegetable broth
3.5 oz Vegan meat (Quorn)
0.8 cup Almond milk
0.8 oz Edamame beans
Salt
Pepper

Instructions:

Boil the rice for 10 minutes and set aside for another 10 minutes.

Chop the onions.
In a saucepan, add butter, curry, turmeric and onion, turn up the heat and let fry while stirring until the onions soften a bit. Add flour and broth and stir, add the milk little by little while stirring until you get a sauce.
Add the meat and beans and let simmer for 10 minutes under a lid.
Taste with salt and pepper.
Decorate with fresh mint leaves.
